Low Calorie Delicious Breakfast

Now that we all survived “Polar Vortex: Part Deux,” we should all try a new warm breakfast. 
Do you love to eat breakfast as much as I do?
Pancake Recipe:
2 Large Eggs, 1 Medium Banana, 1 tsp Cinnamon, 
Butter or Coconut Oil, 
Mixing Bowl or Measuring Cup,
Fork or Potato Masher, Spatula, Frying Pan,
Powder Sugar - Optional
1 Serving
Calories Under 300
*Did you know a banana is not ripe until you
 see brown spots on it. 
Crack your two eggs in your bowl or measuring cup. 
Beat your eggs well.
Take your fork or potato masher and mash up your banana in the beaten egg mixture. Don't forget to sprinkle in some cinnamon.
As you can see the pancake batter it not very smooth. 
A little bit chunky is a good thing!!!
This is the coconut oil I used for the frying pan.  
You could use butter instead!
You don't need much oil or butter to cook your pancakes. 
Here I just spread the coconut oil around the frying pan. 
Heat your frying pan on medium heat.
Either pour or spoon your pancake mixture onto the hot pan. 
Here is a close up so you can see how the edges looked right before I turned the pancakes over. 
 Here is the first side of the pancakes flipped. 
 You can make about 10 to 12 pancakes depending on the size of the banana. This is one serving too!!! Just double the recipe if you're making breakfast for two.
There you have it a breakfast fit for the Queen and maybe 
the King! 
 I hope you try the pancakes for breakfast or anytime 
you're looking for a sweet yummy snack.

Two large eggs are around 140 calories. 
One medium banana (7" to 8") is about 105 calories.
One pat (teaspoon) of butter is 35 calories.
(Or) use coconut oil at 39 calories a teaspoon.
One teaspoon of cinnamon is 6 calories. 

Sometimes I add chia seeds to my pancakes. I add all the ingredients the same way but let the mixture rest for about 20 minutes. This makes the chia seeds expand before cooking. 
One teaspoon of chia seeds has around 22 calories.

Chia seeds will help you control hunger and keep you full longer due to its high fiber content. Did you know chia seeds have more omega -3 fatty acids than salmon! Chia seeds contain six times more calcium than milk.
Always check with your doctor before trying new foods. 
*If you have mustard seed allergies do not eat chia seeds.
 Don't forget you can add a little powdered sugar to top off your pancakes. These pancakes are moist and yummy! You can even skip the powdered sugar. No maple syrup required! The pancakes are sweet and delicious naturally!!!!

  3. I would like to try these. I eat cold cereal or oatmeal for breakfast so a lot of times I eat eggs for lunch. I've never tried the chia seeds and would like these, too. Thanks for sharing your recipe! Hugs!

    Instead of eggs I would have to use the 0% cholesterol Egg Beaters to make it healthy for both of us. Sounds great and we both use Chia seeds too, had them in my Wild Arugula salad.
    The Coconut oil we get at Costco in large jars...

  24. Now this is a first for me! I've never heard of eggs and bananas being mixed together and calling them pancakes. LOL. I have heard of eggs and cinnamon mixed together to dip bread in and make French toast though. I guess your way is less fattening though. I bet that's a very healthy breakfast.
