Up
until recently I didn’t even give gluten a thought. First, I wanted know what
exactly is gluten and where does it come from? Also, how do you know if you
have a problem eating foods with gluten?
What I
found out so far was that many common foods have gluten,
such as wheat, barley and rye based products. The list also includes corn, rice
and oats. That would include breads, pasta and flour based foods. I’m
finding out gluten is in almost everything we eat and the American diet is
loaded with it!

Symptoms
of gluten intolerance can include:
Headaches
or migraines, stomach pains, sore joints, feeling run down and fatigued, brain
fog, sometimes feeling dizzy, or depressed, skin problems, getting sick often.
Any ONE of these symptoms can be due to eating gluten. Do any of these symptoms
seem like you or someone you love?
Although
not everyone has symptoms when they eat gluten, researchers have linked many
diseases to gluten. I don’t want to sound like an alarmist but we should all
learn about gluten.

I’m
just starting to recover from eating gluten. I ended up with two autoimmune
diseases. I could end up with more autoimmune diseases just by continuing to
eat gluten. I had no idea the damage gluten was doing to my brain and body. The
good news is I can reverse most of it just by changing my diet.

Did you know gluten makes you fat? Stop eating gluten for a few weeks and the

Thank you Dee. Do you know if gluten is akin to high fructose corn syrup, as in is it an additive? Or is it naturally in the foods it's found in?

coincidentally, I went to Whole Foods today and bought the ingredients to make my own gluten-free bread. I will post the outcome after I've made it, lol wish me luck! I've never made it before but wanted to try it and see what all the talk about gluten-free is. :)

This article is so true. My cardiologist has me on a strict diet with NO grains at all. I have lost weight and most importantly lowered my blood sugar levels to the point I am now only using a fourth of the diabetic meds.
Gluten is the biggest threat to our health due to our western diet and lifestyle. I applaud you for going gluten free. We should all strive to achieve this and maybe the food manufacturers would stop poisoning us. Glad you figured out what was making you ill.
It's amazing how many people I've met in the last couple of years who have experienced such an improvement in their health after switching to gluten-free ingredients. Thankfully, more and more gluten-free products are showing up at the supermarket. -- Jan
Thank you for sharing this info, Dee. Going to a gluten-free diet has been a life changer for me, though it isn't easy to do. The hardest thing is visiting friends/ family and they just don't understand how many things have gluten hidden in them, so they think they are offering "gluten-free" food, when in reality, it isn't. Have had terrible migraines and flu-symptoms for a week afterwords. No fun! I'm glad you have found what is causing your illnesses and are able to do something about it. ♥
So glad you are finding a way to feel better and reverse your illness! My son had a gluten allergy as a child and grew out of it, his father had Celiacs disease. In those days I had to look for recipes and they were hard to find, now you have a whole section of ready made gluten free foods, what a blessing that is. Good luck on your journey to recovery!

When I eliminated flour and other starches from my diet, I lost weight easily. The minute I began eating bread again, the weight started creeping back on. I need to get back to the healthier diet.
I heart carbs - bread, potatoes - but when I eat too much - I am sleepy and want more and more - it's a definite addiction.

I'm so glad you stopped by today...I'm gluten free and was diagnosed with Fibromyalga..not sure I spelled that right...but I found out through a blood test that I'm intolerant to gluten, eggs, oats, rice, dairy, yeast, potatoes...I went off of everything and feeling great...my doctor said that all of this was created from the gluten...we genetically change our wheat in the USA and it is creating havoc!

I've been eating gluten free primarily for a couple of months. I haven't noticed big changes, but I feel healthier. Good luck, there are a lot of options these days.

I am hearing more and more about this. Gluten is just not good for us, and it is in sooooo many of the foods we eat!
I think the main problem is that gluten is added to a lot of food. For example, gluten is added to bread to make it rise better, to make it softer and lighter. So even if naturally gluten is in certain levels already present in grains, what makes it worst is that they add more to it, which is not good for us. I believe all things in moderation, unfortunately the food industry does not get that

I rarely eat gluten. I think gluten is from Satan!
I was having some terrible issues, and I have a mast cell disorder I think was caused from eating gluten.
There are so many wonderful gluten-free options out there now….Have you tried the Cup 4 Cup flour? It's a bit expensive, but so worth it.

I'm sorry you've been so sick Dee, but glad you found the source of it. I went wheat free a couple months ago and most days feel so much better. I fell off the bandwagon over Thanksgiving though, and am really feeling the effects today...bad headache, body aches, lethargy and fatigue.
I have tried Einkorn wheat, which is the original biblical wheat before it was so genetically modified. I have tolerated that well. It won't make fluffy white sandwich bread we Americans are so used to, but it makes a delicious, heavier bread! It doesn't seem to bother me like regular flour does.

reading thru your recent posts and saw this one and had to comment. my daughter stopped eating gluten and dairy, going on a mostly paleo eating plan. She lost over 100 pounds in a year and a half and all her vital reading are excellent. She has convinced us all to follow at least a gluten free lifestyle. Even Dr Oz and Dr Weil said the other day on TV to stop eating sugar and flour products! Europe does not have the problem we have becuz they have not GMO'd their food to have excessive gluten in it.
