The Paleo Diet - Eat Like a Caveman

If you have been following my blog you know that I've gone gluten free. I found most of the prepackaged gluten free meals were loaded with stuff that was no good for me. For the last six months I've been eating only a raw food diet. 
I don't mind eating fruits, veggies, nuts and seeds but I needed something more. I don't know about you but when it's cold outside I could eat a bear. 
So it had me thinking what else can I eat???
Have you heard about the Paleo Diet? This diet also has the same foods I've been eating but more stick to your ribs kind of foods. Eggs and meats are included too! I think I've hit the jackpot! 
Or maybe the lottery!
 I’m slowly trying new foods to see how I feel so far so good. Today I ate bread for the first time in 6 months! Woo-hoo! Okay so it's not the bread you’re thinking of. Its Paleo bread and it's not bad. It's good enough that I plan to make it again. The only change I will make in the recipe is the amount of sea salt that was required. It listed 1 1/2 tsp of sea salt. There was way too much salt. If you like large soft pretzels with salt you will love this bread. That is the only way to describe it. My husband and kids all tried it. We all agreed it was good but needed less salt. Now I’m hoping the eggs will agree with me. So far I’m feeling pretty good.

Paleo Bread - Made to be like Wheat Bread

This recipe is from the Paleo Effect Blog
1 ½ cup Arrowroot Powder
1 cup Golden Flaxseed Meal
4 Eggs
4 Egg Whites
4 Tbsp Walnut Oil
1 ½ tsp Coarse Sea Salt
* 4 tsp Baking Powder
2 tsp Cider Vinegar
Coconut Oil 
Preheat the oven to 350 degrees Fahrenheit. Combine all dry ingredients. Then mix the wet and add to the dry until thoroughly incorporated. Rub your bread loaf pan down with coconut oil. Bake for 30-35 minutes or until a toothpick comes out clean.
* I added this Tip - 4 tsp baking powder is changed to 3 tsp coconut flour and 1 tsp baking soda gets rid of the corn starch and the aluminum in regular baking powder.

Wow, Dee, this diet sounds like a lot of work especially if you're cooking for a picky family like I would be. You must be really ill from the gluten. I hope you find exactly the right diet so you can be 100 percent again. Happy holidays.

good for you, raw for six months is quite an accomplishment, wow, my daughter started the Paleo program and felt so good, the gluten removed from her diet had the biggest effect, this bread sounds interesting, I love pretzels!

my daughter has been paleo for 2 years. She lost over 100 pounds the first year and a half. She finds it very easy to stay with and does the "whole 30" every 6 months or so. Hoping you will find it right for you and your family.

Wow...I really have a lot of catching up to do here. 6 months of raw food???!! That is an admirable accomplishment. I have just started looking into a paleo diet and started a board on pinterest for it. I'm adding your bread to it. It looks and sounds really good!
