Take your fork or potato masher and mash up your banana in the beaten egg mixture. Don't forget to sprinkle in some cinnamon.
As you can see the pancake batter it not very smooth.
A little bit chunky is a good thing!!!
This is the coconut oil I used for the frying pan.
You could use butter instead!
You don't need much oil or butter to cook your pancakes.
Here I just spread the coconut oil around the frying pan.
Heat your frying pan on medium heat.
Either pour or spoon your pancake mixture onto the hot pan.
Here is a close up so you can see how the edges looked right before I turned the pancakes over.
Here is the first side of the pancakes flipped.
You can make about 10 to 12 pancakes depending on the size of the banana. This is one serving too!!! Just double the recipe if you're making breakfast for two.

Don't forget you can add a little powdered sugar to top off your pancakes. These pancakes are moist and yummy! You can even skip the powdered sugar. No maple syrup required! The pancakes are sweet and delicious naturally!!!!

Yummy, I'm starving I will be right over for breakfast. Great tutorial and pics. I use the same recipe but instead of a banana I use pumpkin puree.

Instead of eggs I would have to use the 0% cholesterol Egg Beaters to make it healthy for both of us. Sounds great and we both use Chia seeds too, had them in my Wild Arugula salad.
The Coconut oil we get at Costco in large jars...

Now this is a first for me! I've never heard of eggs and bananas being mixed together and calling them pancakes. LOL. I have heard of eggs and cinnamon mixed together to dip bread in and make French toast though. I guess your way is less fattening though. I bet that's a very healthy breakfast.
These sound good. I love pancakes. I never though of putting powdered sugar on them. I must try that ASAP!Andy frying in coconut oil is a great idea too. I have just recently started looking for ways to use coconut oil in food. I already us it on skin and hair.
